It’s time to take a break from our regular blogs concerning traditional baked goods. I present to you: something baked, but not in a bakery (unless it’s a really cool bakery)… cheesy potato casserole!
I’ve really been wanting to get into savory recipes, like my favorite dinner recipes, delicious side dishes, and amazing appetizers. That’s why I am so stoked to share the first of many savory recipes with you, my cheesy potato casserole.
The #1 ingredient which makes my casserole recipe stand out from all the others, is the amazing Three Cheese Powder from Hoosier Hill Farm. I love their new cheese powders because they make it easy to elevate any dish. As long as you have the powder you can take any dish from drab to fab with just a sprinkle!
Potato Casserole, Funeral Potatoes, What’s the Difference?
This dish might look familiar to you, but maybe you know it by its other name: funeral potatoes. Yes, they’re the same thing! The name “funeral potatoes” came from this recipe being served so often as a side dish at after-funeral lunches, that the word funeral somehow worked its way into its nickname. When I brought the left overs into work the other day, my coworker mentioned that his family just calls them “good potatoes” because that’s exactly what they are, really dang good potatoes. No matter what you want to call them, they are sure to please! This dish is delightfully creamy, crispy, and as flavorful as ever thanks to the Three Cheese Powder from Hoosier Hill Farm!
What Can I Serve This With?
Cheesy potato casserole is a classic and comforting dish that can be served as a side or main course. To make a satisfying meal, I recommend pairing it with entrees that complement its creamy and cheesy flavor. A grilled or roasted protein, like chicken, pork, or beef are perfect pairings. Alternatively, for a vegetarian option, you could consider serving the casserole with a roasted vegetable medley, such as broccoli, carrots, and Brussel sprouts. The earthy and slightly sweet flavors of the vegetables can add a nice contrast to the creamy and cheesy casserole.
I think this would also go really well with soup or salad. For a nice warm comfort meal, you could pair the casserole with a tomato soup. The acidity of the soup would nicely cut through the richness of the potatoes, creating a well balanced flavor. As far as salads go, you can’t go wrong with the fresh, crisp, slightly acidic, Caesar salad. The tangy dressing can add a refreshing element to the meal. Cheesy Potato Casserole with Hoosier Hill Farm Three Cheese Powder
Ingredients
Cheesy Potato Casserole
- 1/4 cup Hoosier Hill Farm Three Cheese Powder
- 1/2 cup Hot Water
- 1 can (10.5 oz) Cream of Chicken Soup
- 1 1/2 cups Sour Cream
- 4 tbsp Unsalted Butter, melted
- 1/2 cup Minced Yellow Onion
- 1 tsp Salt
- 1 tsp Garlic Powder
- 1 tsp Black Pepper
- 1/4 tsp Onion Powder
- 2 1/2 cups Shredded Sharp Cheddar Cheese
- 30 oz Frozen Hashbrowns, thawed
Corn Flake Topping
- 4 tbsp Unsalted Butter, melted
- 3 cups Corn Flakes
Instructions
For the Casserole:
- Set the oven to 350F.
- Melt 4 tbsp of butter in a microwave safe bowl. Set aside.
- In a small bowl, combine the Hoosier Hill Farm Three Cheese Powder and the hot water. Whisk until fully combined and thick.
- In a large bowl, add the cheese sauce, cream of chicken soup, sour cream, melted butter, minced onion, salt, garlic powder, pepper, and onion powder.
- Use a whisk to combine all above ingredients thoroughly until homogenous.
- Add the cheddar cheese and fold in with a spatula until equally distributed.
- Finally, add in the potatoes. Stir and fold in the potatoes until everything is well mixed into a thick paste.
- Transfer the cheesy potato mixture to a 9×13 inch dish and smooth out the top.
For the Topping
- Melt 4 tbsp of butter in a microwave safe bowl.
- Add 3 cups of cornflakes to a gallon-sized ziplock bag or large bowl.
- Add the butter to the cornflakes and toss to make sure the cornflakes are equally coated in the butter.
- Sprinkle the cornflake mixture over top of the casserole.
- Place in the preheated 350F oven for 40-50 minutes. Remove from oven and let cool for 10 minutes before serving. Enjoy!
